Pumpkin Soup

2 tb oil, 1 onion (finely chopped), 1/2 c butter, 1 can pumpkin, 3 c broth (vegetarian), 1 c milk, carrots (finely chopped), Salt to taste, Pepper to taste.

How To:

Saute Onions. Add broth and pumpkin. Simmer for 30 minutes. Puree mixture. Stir in milk and warm mixture. Add salt and pepper to taste. Serve.
