Sopita

Ingredients:

  • Pasta (Shell pasta, Letter pasta, elbow macaroni, really any pasta.)
  • Chicken Stock
  • Crushed tomatoes (1 can)
  • Salt
  • Mexican Oregano
  • Coriander seed
  • Onion
  • Garlic
  • Lime Wedge
  • Scallions (optional)
  • Olive Oil

Instructions:

Heat oil in medium pot or wok. Add pasta shells. Saute the pasta for a few minutes over medium heat and then add minced onion. Cook until the shells are toasted and the onion is soft.

Pour in chicken broth or stock. Add spices. Add one can crushed tomatoes. Stir to combine. Add garlic cloves and bring to a boil. Simmer on low heat for 10-15 minutes until shells are tender and soup has reduced.

Serve with lime wedge on top if desired. You can also add toppings of cheese or sour cream if desired. Serve with tortillas.
